2/3 cup plain bread crumbs
2/3 cup grated Parmesan cheese
¼ cup fresh parsley, minced
¼ tsp. salt
¼ tsp. freshly ground pepper
5 Tbsp. butter or margarine
3 cloves of garlic, minced
4 large boneless chicken breasts

Preheat oven to 350°F. Trim chicken if necessary. Rinse chicken and pat dry. In a wide shallow bowl, mix together bread crumbs, Parmesan cheese, parsley, salt and pepper. Set aside. In a small saucepan heat butter and garlic over low heat until butter is melted. Remove pan from heat. Brush chicken pieces on all sides with the garlic butter. Roll in the bread crumb mixture until coated. Place chicken skin side up on a large foil lined baking sheet. Mix together any remaining butter and bread crumb mixture. Sprinkle over chicken. Bake one hour at 350°F.
