1 Tbsp. vegetable oil
1 small zucchini, sliced ¼ inch thick on the bias
1 small onions, cut into thin wedges
1 cup sliced mushrooms
1 sweet red bell pepper, cut in thin strips
8 ounces fresh bean sprouts
1 Tbsp. soy sauce
½ tsp. sugar
¼ tsp. pepper

Pour cooking oil into wok or large skillet. Add more oil during cooking if needed. Heat over medium high heat. Stir fry zucchini and onion for 4 minutes. Remove zucchini mixture from the wok.
Add mushrooms and sweet red pepper to the wok. Stir fry 1 minute. Remove mushroom mixture from wok.
Add bean sprouts, soy sauce,, sugar and pepper to hot wok. Stir fry for 2 minutes. Return zucchini mixture and mushroom mixture to wok. Cook, gently stirring until heated through. Serve immediately.
